Freshly Baked Plans: Nicole Fritzsche Launches Sticky Fingers Cooking® in Northern Colorado!

From Cookies to Cooking

Nicole Fritzsche’s path to Sticky Fingers Cooking® wasn’t a straight line. A mom of three young children, she studied health and exercise science, earned a master’s in early childhood education, and then taught elementary school for five years.

In 2020, after the birth of her second child, Nicole stepped out of the classroom. “This was during COVID, so it was a good time to be home with the kids,” she explains. 

But Nicole isn’t one to sit still. By 2021, she had turned her lifelong love of baking into a business: Cookies by Nicole. “I wanted something to work towards… and something I could do with my kids at home while being available to them,” she says.

Her decorated sugar cookies took off. “It spread like wildfire,” she says. Soon she was teaching private decorating classes, too—but hit a limit. “I’d kind of maxed out my cookie business. I’m as busy as I can be, but can’t take on any additional orders and don’t want to do a brick and mortar.”

Discovering Sticky Fingers Cooking®

Years earlier, Nicole and her husband, Beck, had attended a cooking class for adults at Denver’s Stir Cooking School, which also hosted Sticky Fingers Cooking® summer camps (still does!). She remembers seeing an ad there for the kids’ cooking camps. “I always thought I could be an instructor for Sticky Fingers Cooking®,” she says. “It looked like such a fun job! I didn’t pursue it because it was in Denver and we live in Erie.”

When she began searching for her next step, the idea resurfaced. “I was thinking about my next career move and looked up kids cooking classes,” she says. “I remembered Sticky Fingers Cooking® and reached out. It felt right from the beginning, and I took a leap.”

Founder and CEO Erin Fletter also saw a natural fit: “From our very first conversation, I knew Nicole was destined to thrive...
